Sauvignon Blanc is an unmistakable popular white wine grape variety. It is a green-skinned grape variety, often referred to as “grassy,” because it has pronounced green herbal flavors, crispness, and racy acidity. The Sauvignon Blanc grape origin can be traced from the Bordeaux region of France though it is highly associated with the Loire Valley due to its pivotal role in Sancerre and Pouilly-Fume. This wine name, Sauvignon Blanc is borrowed from the French word Sauvage, and blanc. Sauvage meaning wild since it grew like a weed throughout the Bordeaux region, while blanc meaning white due to its early origins as an indigenous grape in South West France.
From Bordeaux, Sauvignon Blanc found another home in New Zealand. New Zealand produced a bright, crisp, and refreshing Sauvignon Blanc wine style that was incredibly affordable, capturing a vast market internationally. From New Zealand, Sauvignon Blanc became so popular, and the rest of the world took notice of this vibrant wine. Other wine-producing regions like California, Chile, and South Africa started making Sauvignon Blanc wines representations of the grape. Sauvignon Blanc grape is today grown in many of the world’s wine-producing regions, offering a variety of wine styles. Though Sauvignon Blanc produces different wine styles, it is usually famous for its dry wine style, mostly known for its refreshing, crisp, elegant flavors attributed to its high acidity level, and low sugar content. It is also used in making the famous Bordeaux dessert wine (Sauterne) and some sparkling wines, especially from New Zealand.
Sauvignon Blanc wine flavors of aggressive grassy and sweet tropical are highly influenced by the climatic condition of the area the grape is cultivated. In cooler climates regions or early harvest, the wines produced tend to have noticeable acidity, bell peppers, grassy, and green herbal flavors, along with some tropical fruit and floral notes. In warmer climates or late harvest, the wine produced tends to develop more ripe tropical fruit notes. However, if over ripen the grape may lose most aroma, leaving slight grapefruit and tree fruit notes. Sauvignon Blanc wines do not usually benefit from aging and are mostly consumed young, though they may be aged in stainless steel and bottled while fresh and youthful. It is hardly aged in oak, with the winemakers desiring to exhibit the grape bright and fruity characteristics. However, to produce some of the finest Sauvignon Blanc wines, such as Pessac-Léognan in Bordeaux, it is blended with other white grapes varieties and matured in oak.
Sauvignon Blanc wine is best served when slightly chilled at around 50–55°F. If served too warm, the alcohol will be more noticeable while flavors and acidity will taste dull. If served too cold, the aromas and flavors will be muted. This type of wine excellently pairs with fish sushi and cheese, particularly chèvre salad. The Sauvignon Blanc readily accessible flavor, crispness, and freshness make it appeal to a broad audience offering a great wine choice for every wine lover.
