Balvenie brand
Balvenie is a popular Speyside single malt scotch whisky from Dufftown, Scotland. It is produced by William Grant & Sons, a family-owned distillery and the third largest Scotch producer, after Diageo and Pernod Ricard. William Grant founded Balvenie whiskey. Born in his father's house in Dufftown on 19 December 1839, William started working at a farm on the River Deveron upper reaches to herd cattle at the age of seven. He later became an apprentice to a shoemaker and worked as a clerk. In 1866, William took a job as a book-keeper at Mortlach distillery. He was then appointed as clerk and manager, and he set out to learn the art of distilling, which took him about twenty years of learning. After learning the distilling art, William Grant resigned from his job at the Mortlach distillery, bought a field near Balvenie Castle, and then drew up plans for his distillery. The foundation stone for William Grant distillery was laid in the autumn of 1886 and named after the neighboring castle - Balvenie.
William Grant & Sons had the services of the most experienced experts in the distilling industry, David Stewart, who became Balvenie's Malt Master. David Stewart is famous for being the first to create the process that would later be known as wood finishing, which results in greater depth and complexity of the final whisky flavor. The wood finishing process is where whiskey is matured in one type of cask, i.e., oak cask, and then transferred into a second cask type, i.e., sherry, rum, or port oak to complete the maturation process. Balvenie Grant & Sons were among the first distilleries to introduce a 'finished' single malt with Double Wood launched in 1993. First, it is matured in ex-Bourbon casks before being transferred in ex-Sherry cask for a short period of secondary maturation.
Balvenie is one of only seven Scotch distilleries to boast if their own in-house floor malting using locally hand-cut peat, which also supplies its neighbor Glenfiddich. Although the in-house floor matting is used in a small percentage, it is believed it highly contributes to the character of the Balvenie final product. It is also the only distillery that still practices all the five rare crafts onsite (growing barley, malting barley, onsite CopperSmith, and onsite Cooperage).
